Funky mixed fermentation Saison in wood which previously held C our batch 100. No yeast pitched, only the dregs of C remaining in the barrel. Like one of our previous batches Bootsy we are starting primary fermentation with the funky bugs as opposed to waiting till after we finish primary fermentation. That should allow the funky bugs more time to take hold and create some exciting flavours.
